Recent apple picking at my parents’ place
Fatigue got the better of me most days this week, which explains the two Saturday Snapshots posts in a row, with no posting in between. Oh, well, those weeks happen, right?
A recent homeschool science experiment
IT Guy spent most of the week in Florida, without me, fixing on a customers servers. That’s computer-talk for big computers that run lots of things. Anyhoo, that meant I was on solo-parenting duty, and it also meant that I slept lighter than usual (especially the night that almost-5-yr-old Joseph came up in the night for a drink of water and I laid there, frozen still, heart pounding, barely breathing, listening to try to determine if the noise in the kitchen was a child or an intruder, because, well, I worry about things like that). So, yeah, a tired week.
The garage-to-living-space makeover continues…
But we managed some homeschooling, even making it to co-op (I’m co-teaching a cooking class this year with one of my sisters, so there’s extra incentive to make it there each time!) And we managed several Tae Kwon Do classes, as well as this week’s advanced archery classes. And we managed quite a bit of baking, which is almost always fun. ๐

My in-between-time was often spent planning and organizing homeschooling stuff (a never-ending story around here) and working on a couple new knitting designs. Of course, I ran out of the yarn I need for a couple of my projects, so I started a couple more to keep my hands busy until I can get some more, because that’s what knitters do, right?
The cold weather is moving in quickly, and my yearly oh-my-goodness-where-did-summer-go-and-why-is-fall-so-short-in-Minnesota-the-freezing-time-will-be-here-any-moment panic has begun to set in. It messes with my head each year, and I’m bound and determined to be proactive against the SAD before it sneaks up behind me and sucks the wind from my sails. Vitamin D, here I come.

Those bars look delish!! I too love to cook grain free and love using almond flour and coconut flour.
